La pandemia de Covid-19 vino a acentuar la visibilización de distintas problemáticas que son producto del agotamiento de los paradigmas civilizatorios de Occidente. En el campo de interés de una institución como la Universidad Autónoma Chapingo, Institución de Educación Agrícola Superior, puso de relieve el vínculo estrecho en el binomio salud-alimentación, toda vez que cuando menos tres de las comorbilidades asociadas a la tasa de fallecimientos por el virus tienen que ver con una alimentación inadecuada relacionada con un patrón de consumo alimentario basado en productos industrializados.
