El pulque es una bebida alcohólica ancestral que se comercializa de manera informal, en los mercados callejeros del centro de México. El objetivo fue analizar las dinámicas de reproducción social de los productores de alimentos ancestrales en el contexto del comercio marginal. Se desarrolló un estudio de caso, de tipo cualitativo y exploratorio. Los hallazgos indican que la permanencia de esta bebida se vincula con el despliegue de estrategias de comercialización, construidas a partir de las condiciones del entorno y el capital social del que disponen los vendedores. Dichas estrategias constituyen dispositivos de adaptación que permiten la permanencia histórica de alimentos ancestrales como el pulque.
