description Pulque is an ancestral alcoholic beverage that is sold informally in the street markets of central Mexico. The objective was to analyze the social reproduction dynamics of ancestral food producers in the context of marginal trade. A qualitative and exploratory case study was conducted. The findings indicate that the drink’s permanence is linked to the deployment of marketing strategies, built from the conditions of the environment and the social capital available to sellers. These strategies constitute adaptation devices that allow the historical permanence of ancestral foods such as pulque.

El pulque es una bebida alcohólica ancestral que se comercializa de manera informal, en los mercados callejeros del centro de México. El objetivo fue analizar las dinámicas de reproducción social de los productores de alimentos ancestrales en el contexto del comercio marginal. Se desarrolló un estudio de caso, de tipo cualitativo y exploratorio. Los hallazgos indican que la permanencia de esta bebida se vincula con el despliegue de estrategias de comercialización, construidas a partir de las condiciones del entorno y el capital social del que disponen los vendedores. Dichas estrategias constituyen dispositivos de adaptación que permiten la permanencia histórica de alimentos ancestrales como el pulque.
