description This piece of research is about analyzing and providing evidence about the design and methodology of productive chains or value networks applied to coffee, and its usefulness for the vertical integration of producers and their organizations. Collaborative networks and actors’ self-management play an essential role in the value adding processes and chain innovation, under the perspective of what is known as “entanglement for sustainable development”. The analysis of results of two years of operation of the Innovation Strategy for competitiveness of the Mexican coffee, through technical assistance and training, is presented here, which creates the conditions to integrate networks of professionals and technicians as well as of collaborative and innovative producers. Finally, conclusions and three major challenges of the innovation process in the coffee production chain are presented which seek greater equity in the distribution of the resources generated under a perspective of competitiveness.

En esta investigación se analizan y aportan evidencias acerca de la concepción y metodología de cadenas productivas o redes de valor aplicadas al café, así como su utilidad para la integración vertical de productores y sus organizaciones. En estos procesos de agregación de valor e innovaciones en la cadena tiene un papel fundamental la creación de redes de participación y autogestión de actores, en la perspectiva de lo que se denomina como enredamiento para el desarrollo sustentable. Se presenta el análisis de resultados de dos años de operación de la Estrategia de Innovación hacia la Competitividad en la Cafeticultura Mexicana, mediante la cual se retomó la asistencia técnica y capacitación en el café en México y se tendieron las bases para la integración de redes de profesionistas y técnicos, así como de productores cooperantes o innovadores. Al final se plantean las conclusiones y tres retos importantes del proceso de innovación en la cadena productiva del café, con los cuales se busca mayor equidad en la distribución de los recursos generados en ella bajo una perspectiva de competitividad.
