Catuai Amarillo is an organization located in Chocamán, Veracruz, established in 1990. Three stages have been identified in the 30 years of organizational development. In the first, progress is made towards added value, from “cereceros” they are transformed into “parchment holders”; the second is characterized by the differentiation of the product through organic certification and fair trade for the export of green coffee to the United States and Europe; and the third the search for specialty coffees with greater participation in the national market with roasted and ground coffee. Other important actions are productive diversification, strategic alliances and generational renewal. Despite the achievements, significant challenges remain.

En las tres últimas décadas, en un contexto de neoliberalismo, el sector cafetalero mexicano está enfrentando diversos problemas ocasionados por los bajos precios, afectaciones fitosanitarias y cambio climático.  A pesar de estas adversidades algunas organizaciones de pequeños productores se mantienen produciendo y comercializando cafés diferenciados o certificados. Catuai Amarillo es una organización ubicada en Chocamán, Veracruz, constituida en 1990.  En los 30 años de desarrollo organizacional se identifican tres etapas. En la primera se avanza hacia el valor agregado, de “cereceros” se transforman en “pergamineros”; la segunda se caracteriza por la diferenciación del producto mediante la certificación orgánica y el comercio justo para la exportación de café verde a Estados Unidos y Europa; y la tercera la búsqueda de cafés especiales con mayor participación en el mercado nacional con café tostado y molido. Otras acciones importantes son diversificación productiva, alianzas estratégicas y relevo generacional.  A pesar de los logros, aún persisten importantes desafíos.
