The mezcalero organizations are heterogeneous, with different sizes, characteristics, structures and objectives; the way of producing and grouping them was analyzed; both topics led to the proposal of optimal production processes in accordance with the requirements of the Denomination of Origin Mezcal regulations, proposing organizational schemes throughout the agave-mezcal production chain. The paradigm used was qualitative, with a holistic perspective, interacting with the informants in a natural way, resulting in the key perspectives provided by the mezcal masters, apprentices, magueyeros, intermediaries, bottlers and marketers. The instrument used in the research was of an ethnographic and narrative nature, complemented with the application of 90 in-depth interviews, during August to November of the initial year of research. The organizational system is informal, satisfying local consumption, pretending to meet regional demand, reflecting improvisation in all members of the value chain, lack of evaluation, lack of process monitoring and no quality system. An efficient organization is required, with pertinent management to encourage, facilitate and favor compliance with systematic requirements aimed at improving, disseminating, promoting and offering what a protected product means and its implicit and explicit scope derived from its implementation

El proceso integra selección y corte de materia prima; cocción del agave; molienda del mosto; fermentación del jugo fructosado; destilación; rectificación y maduración del destilado. Las organizaciones de mezcaleros son heterogéneas, cuyo tamaño, características, estructuras y objetivos son diferentes; se analizó la forma de producir y su agrupación; ambos temas dieron pauta al planteamiento de procesos de producción óptimos acordes con la exigencia de la normatividad Denominación de Origen Mezcal, proponiendo esquemas de organización en toda la cadena productiva agave - mezcal. El paradigma empleado fue de carácter cualitativo, con una perspectiva holística interactuando con los informantes de modo natural resultando clave las perspectivas brindadas de los maestros mezcaleros, aprendices, magueyeros, intermediarios, envasadores y comercializadores. El instrumento empleado en la investigación fue de carácter etnográfico y narrativo, complementado con la aplicación de 90 entrevistas a profundidad, durante agosto a noviembre del año inicial de investigación. El sistema de organización arraigado es informal, satisfaciendo el consumo local; pretendiendo hacer frente a la demanda regional, reflejando improvisación en todos los integrantes de la cadena de valor, carencia de evaluación, igual en seguimiento en procesos y nulo sistema de calidad.
