Sumario: | The lamb barbacoa is a gastronomic product that stands out as the main form of consumption of sheep meat in Mexico. It is a traditional food of Texcoco and surrounding regions, which nowadays shows a decrease in consumption, this prompted to study the demands of the current consumer. The results indicate that only a small part of the population shows increases in their consumption. And the group that, on the contrary, has opted to reduce it has done so, mainly due to health reasons. The price is a variable of less importance in determining volumes or characteristics of consumption. |
