La barbacoa de borrego es un producto gastronómico que destaca como la principal forma de consumo de carne ovina en México. Es un alimento tradicional de Texcoco y regiones aledañas, actualmente muestra un descenso en su consumo, lo que impulsó a estudiar las exigencias del consumidor. En la mayoría de los casos, el consumo de barbacoa permanece constante, solo una pequeña parte de la población manifiesta incrementos en su consumo. Y el grupo que, por el contrario, ha optado por reducirlo lo ha hecho impulsado, fundamentalmente, por motivos de salud. Destacando el hecho de que el hábito de consumirla está más asociado a factores de tipo cultural y social que de tipo económico, ya que el precio resultó ser una variable de menor importancia para determinar los volúmenes o características del consumo.
