description The MESMIS methodology was applied in 14 communities of the central region of la Huasteca Potosina in order to evaluate sustainability levels of the systems to produce brown sugar cones of two types: ‘black’ and ‘gold dust’. The activities referring to these systems were considered risky to the existence of indigenous communities because of their technological stagnation and the product’s quality problems. 29 indicators were defined and associated to these qualities: productivity, stability, resilience, reliability, adaptability, equity and self-management; all of them considered into economic, social, environmental and cultural dimensions. Our results show that the production of ‘gold dust’ sugar cones is a sustainable alternative as there is an increase of 75.8% in the above mentioned indicators; however, the remaining 24%, referred to environmental aspects, showed no movement. These are elements inherited from the reference system to the innovative system, but 31% of the indicators stayed under 50% of the marginal value of sustainability.

These are elements inherited from the reference system to the innovative system, but 31% of the indicators stayed under 50% of the marginal value of sustainability.  Con la metodología del Marco para la Evaluación del Sistema de manejo de Recursos Naturales Incorporando Indicadores de Sustentabilidad (MESMIS) se evaluaron los niveles de sustentabilidad en los sistemas para la producción de piloncillo negro y oro molido en 14 comunidades de la región centro de la Huasteca Potosina, toda vez que la actividad piloncillera fue considerada en riesgo de desaparición de las comunidades indígenas, dado su estancamiento tecnológico y comercial, además por los problemas de calidad del producto. Se definieron 29 indicadores correspondientes a los atributos: productividad, estabilidad, resiliencia, confiabilidad, adaptabilidad, equidad y autogestión, en sus vertientes económica, social, ambiental y cultural. Se encontró que la producción de piloncillo oro molido es una alternativa sustentable, al registrar incrementos en 75.8% de los indicadores; sin embargo los del 24% restante, propios del área ambiental, permanecieron estáticos, elementos heredados del sistema de referencia al sistema innovador, en tanto que 31% de los indicadores se mantuvo debajo del 50% al valor marginal de sustentabilidad.
