description The environmental impact of human activities negatively influences the ecosystem balance, and food production systems are the cause of up to 30% of greenhouse gas (GHG) emissions. The consumption of food products that precedes this production chain is influenced by various social, cultural, and economic factors, such as the current COVID-19 pandemic, which, through home quarantine, affects behavioral, cognitive, and physiological processes of people. The objective of this research was to analyze the sociodemographic characteristics of eating patterns and their CO2 emission in a sample of Mexican adults before, during, and after the home confinement due to coronavirus. The data was obtained through an electronic survey that included an adaptation of the Food Consumption Frequency of Teenagers and Adults, which was distributed through the main social networks, obtaining a total of 1 114 surveys. Subsequently, the dietary patterns and their carbon dioxide emission were determined. A variation in the intake of different food products and their carbon footprint was identified according to the sociodemographic qualities of the population and the confinement analysis times, analyzed by sections and conglomerates. It was found that the demographic properties of the sample and the Home Confinement by the COVID-19 (HCCOVID-19) are factors in the dietary diversity and its CO2 emission.

El impacto ambiental de las actividades humanas influye negativamente en el equilibrio ecosistémico y son los sistemas de producción de alimentos la causa de hasta el 30 % de la emisión de gases de efecto invernadero (GEI). El consumo de productos alimenticios que precede a esta cadena de producción se ve influenciada por diversos factores sociales, culturales y económicos como lo es la actual pandemia de COVID-19 que, por medio de la cuarentena domiciliaria, afecta los procesos conductuales, cognitivos y fisiológicos de las personas. El objetivo de esta investigación fue analizar las características sociodemográficas con los patrones alimentarios y su emisión de CO2 en una muestra de adultos mexicanos antes, durante y después del confinamiento en casa por coronavirus. Los datos se obtuvieron por medio de una encuesta electrónica que incluyó una adaptación de la frecuencia de consumo de alimentos de adolescentes y adultos y que se distribuyó a través de las principales redes sociales, obteniéndose un total de 1 114 encuestas. Posteriormente se determinaron los patrones dietarios y su emisión de dióxido de carbono. Se identificó una variación de la ingesta de los diferentes productos alimenticios y su huella de carbono de acuerdo con las cualidades sociodemográficas de la población y los tiempos de análisis del confinamiento, analizado por secciones y conglomerados.
