Rapid Myoglobin Aggregation through Glucosamine-Induced α-Dicarbonyl Formation
The extent of glycation and conformational changes of horse myoglobin (Mb) upon glycation with N-acetyl-glucosamine (GlcNAc), glucose (Glc) and glucosamine (GlcN) were investigated.
