description | This article describes the data on metagenomic profile of the bacterial community and diversity in the brine of fermented romaine lettuce in two experimental brine salinity (5 and 10%) obtained by Illumina MiSeq sequencing of V3–V4 region of 16S rRNA gene. A total of 98,660 reads (10%) and 95,968 (5%) consisted 38 and 47 consensus lineages (OTUs), respectively. Predominating phyla in 10% were 55.89% Proteobacteria and 41.97% Firmicutes, while predominating phyla in 5% brine were 63.47% Proteobacteria and 34.60% Firmicutes. The predominating lower taxa in 10% brine were Haererehalobacter salaria (54.19%) and Bacillaceae (33.2%), while in 5% brine were Enterobacteriaceae (46.67%) and Bacillus (21.53%). Leuconostoc (6.97%) and Lactococcus (3.97%) only appeared in 5% brine. The data presented here is the first metagenomic profile of romaine lettuce fermentation in different brine concentration and will serve as a baseline to understand the shifting of bacterial diversity associated with the change in brine concentration. |
