Nitrate Quantification in Fresh Vegetables in Shanghai: Its Dietary Risks and Preventive Measures

To investigate nitrate and nitrite content in fresh vegetables, 264 samples were randomly collected in the farmers’ markets in Shanghai, Southeast China.
